    Tamagoyaki

    INGREDIENTS

    • 4 eggs
    • ¼ tbsp soy sauce
    • ¼ tbsp salt
    • ¼ tbsp sugar
    • Butter

    METHOD

    1. Mix eggs, soy sauce, sugar and salt in a bowl
    2. Heat some butter in a non-stick pan
    3. Pour a thin layer of egg mixture and tilt it to make sure it covers the bottom of the pan
    4. Gently roll this into a log while there is still liquid on top
    5. Pour some more egg mixture on the bottom of the pan while the egg roll is on one end
    6. Roll the log back to the new layer of egg mixture to make a bigger log
    7. Repeat until all the mixture is used up or as per your preference
    8. Once the surface is nicely cooked, turn off the heat and slice it in pieces
    9. Serve hot

    INGREDIENTS

    • 4 large eggs
    • 1 tbsp olive oil
    • ½ medium-sized onion, peeled and diced
    • 1 clove garlic, minced
    • 2 tbsp tomato puree
    • 3 cups ripe tomatoes, diced
    • 1 medium bell pepper, chopped
    • 1 tbsp paprika
    • 1 tbsp cumin powder
    • pinch of sugar
    • salt and pepper to taste

    METHOD

    1. Heat olive oil in a pan, add onions and garlic and saute till it becomes fragrant
    2. Add bell pepper to the mixture and stir until softened
    3. Add tomatoes and tomato puree to this mix, followed by spice and sugar and stir until blended
    4. Allow the mixture to simmer on medium heat until it starts to reduce
    5. Now add sugar, salt and pepper as per your taste preferences
    6. Crack eggs over the mixture and let them cook on the tomato sauce
    7. Cover the pan and let it simmer for 10-15 minutes
    8. Garnish and serve as a dip with pita or bread, or you can also serve it with salad for a light meal

    INGREDIENTS

    • 8 eggs
    • 1 large onion, finely chopped
    • 3 cups diced tomatoes
    • 4 green chillies, sliced into rings
    • 4 tbsp butter
    • 1 tbsp paprika
    • salt and pepper, to taste

    METHOD

    1. Melt the butter in a pan and saute the onions till soft
    2. Add pepper, followed by tomatoes, and saute for 3 to 4 minutes
    3. Meanwhile, mix the eggs with salt, pepper and paprika powder to taste
    4. Pour this mixture over the vegetables and keep stirring with a fork or a whisk until set
    5. Serve hot

    INGREDIENTS

    • 4 eggs
    • 3-4 tbsp yoghurt
    • 1 medium onion, chopped
    • 1 tbsp ginger, grated
    • 1 tbsp garlic, grated
    • ½ cup tomatoes
    • ½ tbsp pepper
    • ½ tbsp coriander powder
    • ½ tbsp cumin seeds
    • ½ tbsp turmeric
    • 2 tbsp cooking oil

    METHOD

    1. Boil the eggs, remove their shells and make 5 to 6 slits in each egg so that they can absorb the gravy
    2. Heat oil in a pan, add cumin seeds and saute until it starts sputtering
    3. Add onions to the pan and saute until soft
    4. Add ginger and garlic and fry for 2 to 3 minutes
    5. Add turmeric, coriander powder, red chilli powder and salt
    6. Add in the tomatoes and fry till the oil separates
    7. Remove the pan from heat and add in yogurt, one teaspoon at a time.
    8. Turn on the heat and cook for a few minutes until desired consistency is achieved
    9. Add the eggs to this mixture and heat for 2 more minutes
    10. Your egg curry is ready to serve
